We small batch our harvested animals for traceability. We only run small batches, one at a time harvesting and hand processing,  so that our grass fed ground beef only comes from 1 animal, we NEVER mix sources.  We put a "packaged on" date on your meats so we can trace the meat you have back to a specific animal, a specific North Carolina field it grazed on and we know its genetic lineage. We ALWAYS use a single source for our grassfed beef, our ground pastured pork, our sausage.  To go one step further, all of your meat will come from the same animal. Your (better than) organic chicken will all come from the same batch, so we know the North Carolina or South Carolina field they were pasture raised on.  Our standards are so high that they are unmatched in the country, we do not set the bar, we are the bar.
